Ottolenghi executive chef Sami Tamimi—also a longtime partner in Yotam Ottolenghi’s London restaurant group and co-author of the bestselling cookbooks Ottolenghi and Jerusalem—joins us with Ottolenghi Simple co-author Tara Wigley for a fascinating discussion of their new book on Palestinian cuisine, Falastin, moderated by Bon Appétit’s Andy Baraghani.

A deeply personal window into the distinct culinary traditions of Sami’s country, Falastin explores the evolution of Palestinian food from ancient tradition to dynamic modern cuisine. Included are secrets from home kitchens, farmers, refugee camps, even a master tahini maker, and recipes ranging from a Pulled-Lamb Schwarma Sandwich to Labneh Cheesecake with Roasted Apricots, Honey and Cardamom, all supported by stories of Tara’s travel and culinary explorations through the region.
