Chocolate is just about everyone’s favorite flavor and chocolate desserts and other treats never fail to please.
In this class James Beard Award winner Nick Malgieri will cover all the chocolate basics from how the bean becomes the bar as well as a selection of recipes that can’t be beat.
Jan 25: Chocolate basics, including both choosing the right chocolate and how to melt it perfectly. Then, on to Nick’s most popular and best loved recipe of all time: Supernatural Brownies, a recipe that resulted from a mistake in measuring the ingredients! Crisp Cocoa Hazelnut Biscotti are made in an easy, time-saving way that will surprise you and Swiss Chocolate Sandwich cookies combine fragile chocolate-based shortbread with a suave milk chocolate filling.
Feb 1: Easy and attractive chocolate decorations and 3 luscious cakes. Chocolate Pecan Bourbon Cake is a one-bowl sensation that bakes to a fudgy, rich layer finished off with a chocolate butter frosting. Torta Divina is a flourless baked chocolate mousse that can be flavored with a sweet liqueur or fruit juice, and Ceri’s Lemon-Scented Marble Cake should come with an addiction warning!
Feb 8:The last session explores the world of ganache and chocolate truffles plus an easy way to temper chocolate for coating them. Lesley’s Triple Chocolate Tarts have a cocoa crust baked with a chocolate custard cream and finished with a thin layer of shiny ganache glaze. And to top it all off: Individual Molten Cakes with a lush custard sauce.
