Learn how to make authentic Chinese dumplings from award-winning food journalist and culinary instructor Hsiao-Ching Chou, whose potsticker classes are a Seattle area favorite.
Hsiao-Ching joins us from her kitchen to demystify Chinese home cooking and teach you the steps and secrets to making sensational dumplings from scratch. The gingery spinach and tofu-filled version she shares is featured in her new book, Vegetarian Chinese Soul Food, but the techniques you’ll learn can be applied to dumplings filled with pork, shrimp and more.
You’ll learn how to make Hsiao-Ching’s simple but foolproof dumpling dough — including how to recreate her brilliant rolling technique — how to prepare the filling, fill the dumplings, seal and cook them potsticker style, along with her recipe for a simple go-to dipping sauce. You’ll also learn how to make the fabulous, layered pull-apart flatbreads she calls Flaky Ribbon Pancakes. Love the scallion pancakes at your favorite Chinese restaurant? This event is part of our Kitchen Arts & Letters series. In collaboration with the esteemed culinary bookstore, we present talks, demos and tastings with leading cookbook authors, chefs, food historians and farmers.
Hsiao-Ching Chou is the author of Chinese Soul Food (Sasquatch, 2018) and Vegetarian Chinese Soul Food (Sasquatch, Jan 2021). She teaches Chinese home cooking at in the Seattle area. She serves as the chair of the James Beard Foundation’s Book Awards Committee, and as a member of the board of directors for the Ballard Food Bank. In her “day job,” she’s a communications and marketing consultant.
