  • 2⁄3 lb. beef tenderloin
  • 1 3⁄4 oz. (50 grams) white sesame seeds
  • 1 egg
  • 2 tsp. cooking wine
  • 1⁄3 tsp. salt
  • 2⁄3 oz. wheat flour
  • 1⁄2 cup cooking oil

Cut the beef into chunks 4 inches long and wide and about 1⁄4 inch thick. Pat the beef with the side of a chopper to soften it and place it in a bowl. Add the cooking wine and salt, and marinate for 10 minutes. Whip the egg in a separate bowl. Dust the marinated beef fillet with the wheat flour and then quickly dip in the whipped egg. Sprinkle the sesame evenly on the beef fillet chunks.

In a wok, heat the oil to 275-340°F and deep-fry the beef fillet chunks one by one until each is well done. Remove from oil and drain. Cut the deep-fried beef fillet into squares 2 inches long on each side. Place on a plate and serve.
