Rosh Hashanah is a celebration of new beginnings, featuring foods that signify the excitement and hope of things to come. For this reason, it is common to serve fish, a symbol of fertility and prosperity.

Gefilte fish (a ground, de-boned fish patty) is a popular holiday appetizer that gives the menu particularly Jewish flavor. Avid travelers, Irwin and Fran Miller have crossed the world, experiencing various cultures, people and food. Longtime members of the 92Y family (Irwin has sat on its Board for nearly 30 years), they report that sometimes the best recipes are the simplest. Fran's Gefilte Fish is particularly easy because the fish shop does the work of grinding the fish (they will do it—just ask!).

 
  • 1 pound ground filet of whitefish
  • 1 pound ground filet of pike
  • 1 medium onion, chopped
  • 1 carrot, grated
  • 2 tablespoons vegetable oil
  • Up to 1 tablespoon sugar, to taste
  • 1 teaspoon salt
  • 1/8 teaspoon freshly ground pepper
  • 2 eggs, beaten
  • 1/4 cup cold water

Preheat oven to 350 degrees. Spray bottom and sides of a 9 x 5 x 3 loaf pan with cooking spray. Combine the ground fish with all of the remaining ingredients. Blend well. Pour mixture into prepared loaf pan. Bake one hour, uncovered. Remove from oven. Run a knife around the end of the loaf to loosen it from the sides of the pan. Invert the loaf pan on a platter and slice to serve. Serve hot, cold or at room temperature.
